Just a quick post to share an awesome recipe I found today: Chickpea Cookie Bites! I was inspired by this recipe, but, as usual in my household, I didn’t have all the ingredients and I improvised.
I made them with only four ingredients!
The cookie bites were surprisingly decadent, crunchy on the outside and chewy inside, with little melted chocolate bits… heavenly! I can hardly believe they’re so healthy, you can’t taste the chickpeas! Go on and make them, I dare you!
What I had in my pantry:
- 250 gr chickpeas (no skin)
- 1/2 chocolate bar (I used dark chocolate)
- Honey (I’m sure you can substitute with sugar/ agave syrup/ any sweetener of your choice)
- Vanilla extract
You will also need:
- some water
- a blender/mixer
Boil the chickpeas until they are soft; preheat the oven while they’re boiling (yay to time management in the kitchen!). Let them drain and cool while you chop the chocolate in little bits (about the size of chocolate chips – or of course you can use chocolate chips, if you have! ). Add the chickpeas, the vanilla extract, a tablespoon of honey and a little bit of water in your blender and mix until they’ve formed a smooth paste. Add more honey to taste.
When the oven is ready, mix the chickpea dough with the chocolate bits (I only used the bigger ones and added all the scraps for the last row of cookies to make darker ones, as you can see in the photo). Make little balls and place them on a lightly greased cooking pan. Bake until golden brown… and eat them while they’re warm! They are really delicious cold as well, but nothing beats the moment you bite into that melted piece of dark chocolate in the center. Ahhh, the joys of baking!
